Poach– Get a large pan with a lid. Lay the fish out in one layer, cover them with liquid wine, water, milk, fish stock, etc. Then put the lid on tight and heat them up to just below boiling. Filets should cook for 8-10 minutes while whole fish will take 15-20. You can use the liquid that remains for the creation of a sauce as well.
